Worth Knowing
Most of what separates a real service from a cheap one happens after the tanker leaves your premises.
Anyone with a vacuum tanker can empty a grease trap. It is not skilled work and the price reflects that, which is why quotes for this service vary so widely.
What varies underneath the price is where the waste goes. Grease trap waste has to be taken to an approved treatment facility, and that transaction generates a record — quantity, date, carrier, destination. That record is the manifest, and it is the thing an inspector asks to see.
The problem with the cheapest quote is that the cheapest way to dispose of a tanker load is to put it into a manhole somewhere quiet. That happens, and when it is traced, the trail leads back to the establishment the waste came from as much as to the carrier. You paid for a service you believed was compliant and you hold a liability you did not know about.
So the questions worth asking any contractor are simple: where does the waste go, and will I get the manifest. A straight answer to both is more useful than a lower number, and any company doing this properly gives it immediately.
A grease trap is not a filter. It is a chamber that slows wastewater down enough for physics to do the work — fats and oils are less dense than water and float; food solids are denser and sink; the water in the middle passes out through an outlet positioned between the two layers. Baffles control the flow so it cannot travel straight from inlet to outlet.
The whole thing depends on retention time. Water has to stay in the chamber long enough for that separation to happen, and retention time is a function of the volume available. As the floating scum layer thickens and the sludge layer builds on the floor, the usable volume shrinks, water moves through faster, and less separation occurs.
This is where the quarter-full rule comes from. Once combined FOG and solids reach about a quarter of the operating volume, efficiency falls off, and beyond that the trap is largely passing grease through while still looking like a working installation from above. It is not a regulation invented to sell services — it is the point at which the physics stops working.
It also explains why a service that skims the top layer and leaves is close to useless. The sludge on the floor is a large part of the lost volume, and removing only the visible half means the trap is back at the threshold in a fraction of the interval.
Dosing products are widely sold to restaurants as a way to reduce pump-out frequency, and it is worth being precise about what they actually achieve.
Bacterial and enzyme products digest organic matter over time. In a drain line, used properly, they can help keep residue down between cleans. What they do not do is remove FOG from a trap — the mass is still in the chamber taking up volume until somebody pumps it out.
The more serious issue is emulsification. Some products, particularly surfactant-based ones, break grease into fine droplets that no longer float. That looks like the trap is working better, because the visible scum layer is thinner. What is actually happening is that the FOG is passing out with the water into the sewer, which is exactly what the trap exists to prevent. The problem has not been solved; it has been moved somewhere you cannot see it and where responsibility for it is more serious.
Dosing is a supplement to a service interval, never a replacement for one. Anybody selling it as a way to stop pumping is selling you a compliance problem in a bottle.
A grease trap is specified for a throughput — the flow rate from the fixtures connected to it and the grease load that comes with them. That specification was made when the kitchen was fitted out, based on what the kitchen was then.
Kitchens change. Covers double, the menu moves toward fried service, a second fryer goes in, hours extend. None of that changes the trap, and a trap that was correct at fifty covers is undersized at a hundred and thirty. The symptom is a trap that needs emptying far more often than it should, and grease appearing downstream regardless.
At that point shortening the interval is treating it. It works, and it is more expensive every year than replacing the trap with one sized for the kitchen you now have. We will tell you when we think that is the situation, with the loading measurements behind it, even though the recurring service is the better arrangement for us.
The other sizing issue is what is connected. A trap should take the fixtures that produce FOG — pot wash, prep sinks, dishwasher, combi drains. Connecting a hand basin or a floor drain to it wastes capacity on clean water and reduces retention time for everything else.
After a trap is pumped out it has to be refilled with clean water before the kitchen uses it again. This sounds trivial and is skipped surprisingly often.
An empty trap does not separate anything. Wastewater entering an empty chamber travels straight across the floor to the outlet without ever forming the layered arrangement the design relies on, so everything the kitchen produces goes downstream until the chamber has filled naturally.
On a busy kitchen, that first hour after a service is when a lot of grease goes into the line. It is a small operational detail with a real consequence and it costs nothing to get right, which is a fair test of whether a contractor is thinking about the installation or about the invoice.
Where grease has already been passing through, the line beyond the trap has a coating on it and cleaning the trap alone will not stop the blockages. The other half is records. It is worth keeping those records somewhere they survive a change of manager. A recurring situation we meet is a premises under new management where nobody can establish when the trap was last serviced or by whom, which means starting the history from zero at exactly the wrong moment.
We issue documentation each visit and keep our own copy, so a record can be reconstructed if yours has been lost. That is not a substitute for keeping them, but it has saved a few people.
The trap handles what reaches it. How much reaches it is largely a matter of habit at the sink, and small changes make a genuine difference to how fast it loads.
Scrape and wipe pans and plates before they go anywhere near the pot wash. Dry-wiping a fryer basket or a roasting tray with paper removes grease that would otherwise be washed into the system, and paper goes in the bin where it belongs. Used cooking oil should be collected separately for proper disposal, never poured down any drain — a single fryer emptied into a sink can overwhelm a trap on its own.
Strainers on every sink, emptied into the bin rather than rinsed through. Solids that reach the trap become the sludge layer that takes up the volume separation needs.
And avoid running very hot water down in volume at the end of service in the belief it helps. It melts grease and carries it past the trap while it is still liquid, where it cools and sets in the line beyond. Warm water and a strainer beats hot water and hope.
