The problem with the cheapest quote is that the cheapest way to dispose of a tanker load is to put it into a manhole somewhere quiet. That happens, and when it is traced, the trail leads back to the establishment the waste came from as much as to the carrier. You paid for a service you believed was compliant and you hold a liability you did not know about.

So the questions worth asking any contractor are simple: where does the waste go, and will I get the manifest. A straight answer to both is more useful than a lower number, and any company doing this properly gives it immediately.

How a trap separates, and when grease trap cleaning Dubai is due

A grease trap is not a filter. It is a chamber that slows wastewater down enough for physics to do the work — fats and oils are less dense than water and float; food solids are denser and sink; the water in the middle passes out through an outlet positioned between the two layers. Baffles control the flow so it cannot travel straight from inlet to outlet.

The whole thing depends on retention time. Water has to stay in the chamber long enough for that separation to happen, and retention time is a function of the volume available. As the floating scum layer thickens and the sludge layer builds on the floor, the usable volume shrinks, water moves through faster, and less separation occurs.

Enzymes and bacteria: what they do and what they do not

Dosing products are widely sold to restaurants as a way to reduce pump-out frequency, and it is worth being precise about what they actually achieve.

Bacterial and enzyme products digest organic matter over time. In a drain line, used properly, they can help keep residue down between cleans. What they do not do is remove FOG from a trap — the mass is still in the chamber taking up volume until somebody pumps it out.

The more serious issue is emulsification. Some products, particularly surfactant-based ones, break grease into fine droplets that no longer float. That looks like the trap is working better, because the visible scum layer is thinner. What is actually happening is that the FOG is passing out with the water into the sewer, which is exactly what the trap exists to prevent. The problem has not been solved; it has been moved somewhere you cannot see it and where responsibility for it is more serious.

Dosing is a supplement to a service interval, never a replacement for one. Anybody selling it as a way to stop pumping is selling you a compliance problem in a bottle.

At that point shortening the interval is treating it. It works, and it is more expensive every year than replacing the trap with one sized for the kitchen you now have. The other sizing issue is what is connected. A trap should take the fixtures that produce FOG — pot wash, prep sinks, dishwasher, combi drains. Connecting a hand basin or a floor drain to it wastes capacity on clean water and reduces retention time for everything else.

Refilling with water, and the hour nobody thinks about

After a trap is pumped out it has to be refilled with clean water before the kitchen uses it again. This sounds trivial and is skipped surprisingly often.

An empty trap does not separate anything. Wastewater entering an empty chamber travels straight across the floor to the outlet without ever forming the layered arrangement the design relies on, so everything the kitchen produces goes downstream until the chamber has filled naturally.

On a busy kitchen, that first hour after a service is when a lot of grease goes into the line. It is a small operational detail with a real consequence and it costs nothing to get right, which is a fair test of whether a contractor is thinking about the installation or about the invoice.
