A pump is sized for two things: how much water has to flow at once, and how high it has to push. A house where two showers run together needs a certain flow. Buying double that does not give you double the water, because the pipes and the taps decide the flow, not the pump.
What it does give you is short cycling. The oversized pump reaches its cut out pressure almost instantly, stops, then starts again the moment anyone opens a tap. That hammers the pipework, wears the switch out and heats the motor.
The right size runs for a reasonable stretch each time it starts. That is easier on everything and it is quieter to live with.
A variable speed pump avoids the argument entirely, because it slows down instead of stopping. It costs more to buy and it is usually the better answer next to a bedroom.
